Abstract
Description
a)アイスクリームの基本混合物を規定する基本原料を準備する工程と、
b)基本混合物を加熱することで、基本原料に含まれる水分を少なくとも一部(必要があれば、50%以上も)蒸発させて、基本混合物の濃縮物を製造する工程と、
c)基本混合物の濃縮物を混合冷却処理する工程であって、
c1)混合物の濃縮物に基本液体を加えて、混合物を希釈する工程と、
c2)所定の時間、撹拌と同時に熱処理をすることによって、希釈した基本混合物の濃縮物をアイスクリーム様の製品に変換する工程と、を備える。
− 処理チェンバ4を形成する処理容器3と、
− 処理チェンバ4内に搭載された撹拌機5と、
− 熱交換のための、処理容器3と関連する少なくとも一つの熱交換器を備えた、熱処理系と、
− アイスクリームを製造するための基本混合物の濃縮物を収容するカプセル2を受け入れ、収容する装置9と、を備える。
Claims (13)
- アイスクリームの製造方法であって、
a)アイスクリームの基本混合物を規定する基本原料を準備する工程と、
b)前記基本混合物を加熱することで、前記基本原料に含まれる水分を少なくとも一部蒸発させて、前記基本混合物の濃縮物を製造する工程と、
c)前記基本混合物の濃縮物を混合冷却処理する工程であって、
c1)前記混合物の濃縮物に基本液体を加えて、前記混合物を希釈する工程と、
c2)前記希釈した混合物の濃縮物を所定の時間、撹拌と同時に熱処理をすることによって、前記希釈した基本混合物の濃縮物をアイスクリーム様の製品に変換する工程と、を備える方法。 - 前記基本混合物を規定する前記基本原料を準備する前記工程の後であって、前記基本原料を加熱することで、前記基本原料に含まれる水分を少なくとも一部蒸発させて、前記基本混合物の濃縮物を製造する前記工程の前に、前記基本原料を低温殺菌する工程を備える、請求項1に記載の方法。
- 前記基本原料を加熱することで前記基本原料に含まれる水分を少なくとも一部蒸発させる前記工程b)が、前記加熱中に、大気圧以下の圧力に前記基本原料をさらす工程を備える、請求項2に記載の方法。
- 前記基本原料を加熱することで前記基本原料に含まれる水分を少なくとも一部蒸発させる前記工程b)が、40℃と60℃との間の範囲内の温度に前記基本原料を加熱する工程を備える、請求項3に記載の方法。
- 大気圧以下の圧力に前記基本原料をさらす前記工程において、7kPaと20kPaとの間の範囲の圧力に前記基本原料をさらす、請求項3又は請求項4に記載の方法。
- 基本液体を前記基本混合物の濃縮物に加える前記工程の後に、前記基本混合物の濃縮物を熟成する工程を備える、請求項5に記載の方法
- 前記基本混合物を加熱することで、前記基本原料に含まれる水分を少なくとも一部蒸発させる前記工程の後に、前記基本混合物の濃縮物を冷却する工程と、前記冷却した基本混合物の濃縮物を保存するその後の工程と、を備える、請求項2から請求項6のいずれか1項に記載の方法。
- カプセル(2)を準備する工程と、前記カプセル(2)の内部に前記基本混合物の濃縮物を保存する工程と、を備える、請求項1から請求項7のいずれか1項に記載の方法。
- 前記基本混合物の濃縮物を混合冷却処理する前記工程が、前記カプセル(2)の内部に基本液体製品を注入する工程と、前記カプセル(2)の内部に収容された前記基本混合物の濃縮物と前記基本液体製品とを混合する工程と、を備える、請求項8に記載の方法。
- 前記カプセル(2)の内部に収容された前記基本混合物の濃縮物と前記基本液体とを混合する前記工程が、前記カプセル(2)の内部で行われる、請求項9に記載の方法。
- 前記カプセル(2)の内部に収容された前記基本混合物の濃縮物と前記基本液体とを混合する前記工程の後に、前記基本混合物を処理容器(3)の内部に移す工程を備え、撹拌と同時に熱処理をする前記工程が、前記処理容器(3)の内部で行われる、請求項9又は請求項10に記載の方法。
- アイスクリームを製造する装置であって、
−処理チェンバ(4)を形成する処理容器(3)と、
−前記処理チェンバ(4)内に搭載された撹拌機(5)と、
−熱交換のための、前記処理容器(3)と関連する少なくとも一つの熱交換器を備えた、熱処理系と、
−基本混合物の濃縮物を収容するカプセル(2)を受け入れ、収容する装置(9)と、を備えることを特徴とする装置。 - 前記カプセルを貫通するよう設計された、前記カプセル(2)を貫通するノズル(10)と、前記カプセル(2)に収容された原料を前記カプセル(2)から前記処理容器(3)へと移送可能な移送ダクトと、を備える請求項12に記載の装置。
