Abstract
【解決手段】液状の蜂蜜を、温度を少なくとも98℃及び圧力を少なくとも0.914barで真空乾燥して得られる蜂蜜製品であって、該蜂蜜製品は本質的に蜂蜜から成り、水分含量が1重量%未満であり、好ましくは0.3重量%未満であり最も好ましくは0.01重量%未満である蜂蜜製品。更に香味料として、レモン油を原料にレモン香味料を含み、水透水性膜で包装されている蜂蜜製品。
【効果】前記蜂蜜製品は未加工蜂蜜の物理的特性と風味の良い特性を維持しつつ長い保存期間が可能であり、飲み物(暖かい飲み物など)を甘くするために使用できる他、のど飴、及び/又は菓子類の製造に使用できる。

Description
この出願は、2009年1月15日出願の米国特許出願61/144,824及び2009年1月15日出願のカナダ特許出願2649936を優先権主張しており、その内容がこれを参照することで全体として本願に組み入れられている。
水分含量%=(mw/msample)×100
mwは水の質量、msampleは試料の質量である。水の質量は以下の式で表される水分子の数(nw)に関係する。
Mw=nwMw/NA
Mwは水の分子量(18.0g/mol)、NAはアボガド係数(モルあたり分子6.02×1023)である。原則的に、既知の試料の質量中に存在する水分子の数または質量を測定することにより蜂蜜製品の水分含量は正確に決定できる。食品の水分含量を測定中は、水分の増減を防ぐことが重要である。よって、試料を大気にさらすことや気温の過度の変動は最小限にするべきである。

本発明の蜂蜜製品の製造には、シロツメグサ、ムラサキツメクサ、及び/またはタンポポからの花蜜の混合の液状の蜂蜜を、抽出、液化、濾過、短期低温殺菌されたものが使われ、任意でレモン油も原料に使われる。
また、本発明の蜂蜜製品の製造に、不透水性食品級包装、食品級PVC包装トレイ、及び水に対しハイバリアの食品級の封止フィルムが材料に使用される。
また、本発明蜂蜜製品の製造に、重量計、電子万能ミキサー、熱電対温度計、赤外線(IR)水分計、及び熱シーラーが使用される。
水分を除去した蜂蜜製品を成形トレイに分注する前に、迅速に水分含量を調べるため、5gのサンプル単位が採取されてIR水分計で水分が測定された(実施例Iで記載)。蜂蜜製品の水分含量は0.0−1.1重量%であった。
Claims (18)
- 本質的に蜂蜜から成り、水分含量が1重量%未満である蜂蜜製品。
- 前記水分含量が0.3重量%未満の請求項1に記載の蜂蜜製品。
- 前記水分含量が0.1重量%未満の請求項1に記載の蜂蜜製品。
- 前記水分含量が0.01重量%である請求項1に記載の蜂蜜製品。
- 香味料をさらに含む請求項1に記載の蜂蜜製品。
- 前記香味料はレモンの香味料である請求項5に記載の蜂蜜製品。
- 前記レモンの香味料はレモン油を原料とする請求項6に記載の蜂蜜製品。
- 前記蜂蜜製品の糖類は非結晶状態である請求項1から7のいずれかに記載の蜂蜜製品。
- 前記蜂蜜製品は固形である請求項1から8のいずれかに記載の蜂蜜製品。
- 不透水性膜で包装されている請求項1から9のいずれかに記載の蜂蜜製品。
- 水を実質的に再吸収しない保存期間が少なくとも1年である請求項10に記載の蜂蜜製品。
- 請求項1から11のいずれかに記載の蜂蜜製品を含む上気道のケア及び治療製品。
- のど飴である請求項12に記載の上気道ケア及び治療製品。
- 請求項1から11のいずれかに記載の蜂蜜製品を含む菓子類。
- 前記蜂蜜製品は前記菓子類に混入される前に更に加工される請求項14に記載の菓子類。
- 液状の蜂蜜を、温度を少なくとも98℃及び圧力を少なくとも0.914barで真空乾燥して得られる蜂蜜製品であって、前記蜂蜜製品は本質的に前記蜂蜜から成り、水分含量が1重量%未満である蜂蜜製品。
- 第1の工程において、前記液状の蜂蜜の温度を周囲温度から98℃に上昇し、圧力は少なくとも0.914barに保つことを特徴とする請求項16に記載の蜂蜜製品。
- 第2の工程において、前記液状の蜂蜜は、前記蜂蜜製品の前記水分含量が1重量%未満になるまで、前記液状の蜂蜜の温度を98℃に、圧力を少なくとも0.914barに保つことを特徴とする請求項16に記載の蜂蜜製品。
