Abstract
Description
成分を高めた卵の生産のための飼料を、動物飼料についての法規制の範囲内で、策定し調製した。ルテインおよびゼアキサンチンの使用は、EU規則1831/2003によって制限されている。飼料におけるルテインおよびゼアキサンチンの用量は、動物飼料における80ppmという合法的限度を超えなかった。オメガ−3脂肪酸としては、アマニ粕および魚油のようないくつかの材料の成分が充てられる。これらの産物は、飼料成分としての使用について制限されていない。
実施例1に従って生産された卵黄を含有する2種類の製品を調製した。第1の製品は、毎日の使用(いわゆる「一飲」)を意図した100ml飲料である。このような飲料の異なる種類の組成を表2に示す。
保存安定性は、この種の製品に充分であった。
本発明に従う卵およびそれから生産した製品を使用して、無作為プラシーボ対照試験を計画する。ここで、卵は、ルテイン、ゼアキサンチンおよびオメガ−3脂肪酸を高めたものである。
脂質に関して、3つの群、つまり、対照群、飲料群および卵群−通常卵、ルテイン卵、ゼアキサンチン卵−を比較した。ANOVA分析は、ベースラインにおいては、総コレステロール(p=0.951)、LDLコレステロール(p=0.969)、HDLコレステロール(p=0.877)またはトリグリセライド(p=0.542)に差がないことを示した。
総コレステロールレベルに対する卵消費の影響の分析は、3群の間のベースラインと終点との間で、総コレステロールの有意な変化を示さなかった(p=0.163)。しかし、性別についての階層化は、女性集団における有意な影響を示した(p=0.018)。
ANOVA比較は、3群の間でLDLの有意な変化を示さず(p=0.300)、性別についての階層化は、女性集団における卵の有意な寄与を示した(p=0.025)。
血漿HDL濃度の変化の分析は、群間の有意な変化を示さなかった(p=0.257)。
3群の間でトリグリセライド変化に有意な差はなかった(p=0.170)。
ベースラインで、ルテイン飲料群と比較したルテイン卵群において、統計的に有意に高いルテインの血漿レベルがあったが(p=0.036)、対照群に対してはなかった(p=0.058、表4)。性別についての階層化は、ベースラインでの有意な差にならなかった。ゼアキサンチンについては、5群の間で差はなかった。対照群と比較したときのルテイン飲料およびルテイン卵群について、ベースラインと終点との間で、血漿ルテインレベルに有意な変化があった(両方ともp<0.001)。反復測定モデルは、対照群と比較したときのルテイン飲料およびルテイン卵群について、p<0.001という同じ結果を示した。被験者数を群化要因、血漿ルテインレベルを依存性(dependent)、食餌を要因、および週を共変量とする測定の混合モデル分析は、対照群との比較において、週ならびにルテイン飲料およびルテイン卵群の有意な影響を明らかにし(p<0.001)、ゼアキサンチン群は有意には達しなかった(p=0.080)。
ベースラインでは、5群の間で、ゼアキサンチンの血漿レベルに差はなかった(p=0.482)。90日後の変化は、対照群と比較したゼアキサンチン卵群について、有意に差があった(p<0.001)。反復測定モデルは、対照群と比較したときのゼアキサンチン卵の両方について、有意な差となった(それぞれp<0.001)。被験者数を群化要因、血漿ゼアキサンチンレベルをディペンダント、食餌を要因、および週を共変量とする測定の混合モデル分析は、対照群との比較において、週および全食餌の有意な影響を明らかにした:通常卵群(p=0.050)、ルテイン飲料(p=0.042)、ルテイン卵(p=0,006)、およびゼアキサンチン卵群(p<0.001)。
ベースラインでは、どの測定装置によっても、5群の間で有意な差はなかった(p>0.356)。しかし、反復測定分析は、女性集団におけるMPR−ルテイン測定について、通常卵およびルテイン卵食餌の両方の有意な寄与を示した(それぞれp=0.025およびp=0.041)。

Claims (14)
- 機能性食物製品を生産する方法であって、
i)水と1つ以上の他の食品等級材料との、好ましくはその材料の水分散物または水溶液の形態での組み合わせと、
ii)EPA;ビタミンD;葉酸;ビタミンE;キサントフィル;ヨウ素;セレン;および亜鉛の群から選択される、少なくとも1つの薬理学的に有効な栄養分を高めた食餌を家禽に与え、その家禽が産んだ卵を収集し、その卵から卵黄を取り出すことによって得られる卵黄と、
を2〜7の範囲内の比率で混合することを含むことを特徴とする方法。 - 水と1つ以上の他の食品等級材料との組み合わせが、脱脂乳、半脱脂乳、バターミルク、発酵乳、特にヨーグルト、大豆飲料または豆乳、発酵豆乳、果実ジュース、果実裏ごし物、シロップ、野菜ジュース、野菜裏ごし物、およびこれらの組み合わせから選択される、水分散物であることを特徴とする請求項1に記載の方法。
- 製品にエタノールを加える工程、または、製品を処理してリキュールまたはアルコール飲料にする工程を含まないことを特徴とする請求項1または2に記載の方法。
- 1つ以上のさらなる食品等級材料が、炭水化物、たんぱく質、ペプチドおよび脂質から成る群から選択されることを特徴とする請求項1〜3のいずれか1項に記載の方法。
- 少なくとも1つの薬理学的に有効な栄養分が、ビタミンD;葉酸;ビタミンE;ルテインおよびゼアキサンチン;ヨウ素;ならびにセレンから成る群から選択されることを特徴とする請求項1〜4のいずれか1項に記載の方法。
- 機能性食物製品をパッケージに充填し、パッケージを消毒または滅菌することをさらに含むこと特徴とする請求項1〜6のいずれか1項に記載の方法。
- 請求項1〜7のいずれか1項に記載の方法に従って得られることを特徴とする機能性食物製品。
- 薬剤として使用されることを特徴とする請求項8に記載の機能性食物製品。
- 卵黄固形物の量が0.025〜0.4g/mlの範囲内にあることを特徴とする請求項8または9に記載の機能性食物製品。
- 卵白アルブミンの量が、機能性食物製品の総重量に基づき、5重量%未満であることを特徴とする請求項8〜10のいずれか1項に記載の機能性食物製品。
- 請求項8〜11のいずれか1項に記載の機能性食物製品を、50〜150mlの量で収容することを特徴とする閉じられたまたは密閉されたパッケージ。
- 少なくとも1つの薬理学的に有効な栄養分、好ましくは、EPA;ビタミンD;葉酸;ビタミンE;キサントフィル;ヨウ素およびセレンから成る群から選択される、少なくとも1つの薬理学的に有効な栄養分を高めた食餌を家禽に与え、その家禽が産んだ卵を収集し、その卵から卵黄を取り出すことによって得られることを特徴とする卵黄の、機能性食物製品の製造のための使用。
- 乾燥固形物重量に基づき、1〜10の範囲内の比率の卵黄固形物と乳固形物との組み合わせの少なくとも10重量%を含むことを特徴とする組成物。
- 極性乳脂質および/または有効量の乳酸菌を含むことを特徴とする請求項14に記載の組成物。
