Abstract
Description
茶製品を製造する試みが開示されてきた。米国特許出願公開第2007/0248737号では、テアニンを有する茶製品を調製する方法が記載されている。
(a)内因性非タンパク性アミノ酸、外因性非タンパク性アミノ酸、またはその両方、および
(b)内因性抗酸化剤、外因性抗酸化剤、またはその両方、
を含む食品であって、
約125ppm〜約20000ppmの非タンパク性アミノ酸および少なくとも約25ppmの抗酸化剤を含む食品を対象とする。
Claims (19)
- (a)内因性非タンパク性アミノ酸、外因性非タンパク性アミノ酸、またはその両方、および
(b)内因性抗酸化剤、外因性抗酸化剤、またはその両方
を含む食品であって、
125ppm〜20000ppmの非タンパク性アミノ酸および少なくとも25ppmの抗酸化剤を含む食品。 - 少なくとも175ppmの非タンパク性アミノ酸を含む、請求項1に記載の食品。
- 200ppm〜3750ppmの非タンパク性アミノ酸を含む、請求項2に記載の食品。
- 非タンパク性アミノ酸の量の0.2〜1500倍の量で抗酸化剤を含む、請求項1から3のいずれか一項に記載の食品。
- 200〜1100ppmの抗酸化剤を含む、請求項1から4のいずれか一項に記載の食品。
- 非タンパク性アミノ酸が、テアニン、γアミノ酪酸、またはそれらの混合物である、請求項1から5のいずれか一項に記載の食品。
- 非タンパク性アミノ酸がテアニンである、請求項6に記載の食品。
- 非タンパク性アミノ酸の少なくとも25%が外因性である、請求項1から7のいずれか一項に記載の食品。
- 飲料、スプレッド、ソース、ディップ、スプーンですくうことができるドレッシング、アイスクリーム、パスタベースの組成物、小麦ベースの組成物、食事サプリメントもしくは代替ドリンク、または食事サプリメントもしくは代替バー、あるいはミニドリンクである、請求項1から8のいずれか一項に記載の食品。
- 茶飲料である、請求項9に記載の食品。
- 抗酸化剤が、ビタミンC、ビタミンE、ヘスペリチン、ヘスペリジン、ナリンゲニン、エピカテキン、没食子酸エピカテキン、エピガロカテキン、没食子酸エピガロカテキン、カテキン、ガロカテキン、テアフラビン、テアルビギン、またはそれらの混合物を含む、請求項1から10のいずれか一項に記載の食品。
- 抗酸化剤が、カテコール、クマコケモモ、ザクロ、および/またはロイボスエキスである、請求項1から11のいずれか一項に記載の食品。
- 抗酸化剤が、緑茶、紅茶、または柑橘類由来である、請求項1から11のいずれか一項に記載の食品。
- 3を超えるpHを有し、抗酸化剤が非タンパク性アミノ酸を安定化させる、請求項1から13のいずれか一項に記載の食品。
- トウモロコシシロップ、酸味料、ヘキサメタリン酸ナトリウム、カフェイン、ニンジン根、またはそれらの混合物をさらに含む、請求項1から14のいずれか一項に記載の食品。
- 茶葉および3〜45重量%の非タンパク性アミノ酸を含む、請求項1から15のいずれか一項に記載の食品を製造するための原料。
- 茶粉末ミックスおよび3〜45重量%の非タンパク性アミノ酸を含む、請求項1から15のいずれか一項に記載の食品を製造するための原料。
- 液体茶濃縮物および4〜50重量%の非タンパク性アミノ酸を含む、請求項1から15のいずれか一項に記載の食品を製造するための原料。
- a)非タンパク性アミノ酸を供給するステップと、
b)抗酸化剤を供給して非タンパク性アミノ酸を安定化させるステップと
を含む、請求項1から15のいずれか一項に記載の食品を製造する方法であって、
非タンパク性アミノ酸が前記食品の125ppm〜20000ppmを占め、抗酸化剤が前記食品の少なくとも25ppmを占める、方法。
