Abstract
【解決手段】フライ作業中にじゃがいもの薄切り片のほぼ鉛直な配置を容易にすることによるフレンチフライドポテトの調理を開示し、油をパックを通して上方に流れさせながら、薄切り片を、とても深いパック内で調理し、かつ、調理している薄切りパック内の蒸気の捕捉を最小にする。調理器の中を薄切り片を搬送するコンベアベルトが、油の流れを容易にする多数の開口を有し、調理器は、再加熱のために、加工処理経路の側方に及び長手方向に、油の排出を可能にするように構成されている。

Claims (1)
- フレンチフライドポテトの連続調理方法において、
調理油のバットを準備するステップを含み、該バットは、その長さに延びる製品搬送コンベアを含み、且つ、前記バットの底に油入口手段を有し、
前記バット内に大量の調理油を設けるように、前記入口手段からコンベアを通して移動する上向きの流れで油を供給するステップと、
前記調理油の中を移動させるべき、薄切り片のパックを作るのに十分な量で、連続した方法で大量のじゃがいもをコンベア上に載せ、それによって、調理油内に高エネルギーの「沸騰」を生じさせる調理油内に高エネルギーの「沸騰」を生じさせるステップと、
調理油が、薄切り片を「沸騰」で発生した蒸気をじゃがいもの薄切り片のパックから上方へ逃がす概ね上方に突出した姿勢におしながら、じゃがいもの薄切り片のパックをコンベアで移動させるステップと、
バットから薄切り片を取り出すステップと、を含む方法。
