Abstract
【解決手段】ギ酸及び/又はその塩を有効成分として含有する減塩食品用風味向上剤、並びに、減塩食品に、低減された食塩1重量部あたり0.05〜0.3重量部のギ酸が含まれるように、該風味向上剤に添加することを含む、減塩食品の風味向上方法。
【選択図】なし
Description
(1) ギ酸又はその塩を有効成分として含有する、減塩食品用風味向上剤。
(2) 食塩含量が低減された減塩食品に、低減された食塩1重量部あたり0.05〜0.3重量部のギ酸が含まれるように、上記(1)の風味向上剤を添加することを含む、減塩食品の風味向上方法。
(3) 減塩食品は即席めん又は即席スープである、上記(2)の方法。
(4) 食塩含量が低減された減塩食品であって、低減された食塩1重量部あたり0.05〜0.3重量部のギ酸を含む、減塩食品。
(5) 減塩食品は即席めん又は即席スープである、上記(4)の減塩食品。
(6) 喫食時のスープ中の食塩濃度X%(w/v)及びギ酸濃度Y%(w/v)が次式を満たすように食塩及びギ酸を含む、即席スープ。
表1に示した配合で即席めん(担担麺)用のスープを調製した(対照区、減塩区)。対照区と減塩区のそれぞれの食塩濃度を定量したところ、それぞれ1.1%(w/v)および0.8%(w/v)であった。
実施例1で調製したスープ(減塩区)にギ酸ナトリウムを0.03%(w/v)となるように添加した(ギ酸ナトリウム添加区)。
Claims (7)
- ギ酸又はその塩を有効成分として含有する、減塩食品用風味向上剤。
- 食塩含量が低減された減塩食品に、低減された食塩1重量部あたり0.05〜0.3重量部のギ酸が含まれるように、請求項1記載の風味向上剤を添加することを含む、減塩食品の風味向上方法。
- 減塩食品は即席めん又は即席スープである、請求項2記載の方法。
- 食塩含量が低減された減塩食品であって、低減された食塩1重量部あたり0.05〜0.3重量部のギ酸を含む、減塩食品。
- 減塩食品は即席めん又は即席スープである、請求項4記載の減塩食品。
