Abstract
Description
コアセルベーションは、また水相分離とも呼ばれ、疎水性液体をカプセル封入するための非常によく知られた技術である。コアセルベーション法はオイルを含有するマイクロカプセルを提供することを可能にし、その際、カプセル化材料はオイルに不浸透性のゲル化した親水性コロイドであり、かつ芯物質としてのオイルに均一かつ高密度に沈着する。このカプセル化材料は反対の電荷を有する他のコロイドと一緒に錯化されていてもよいタンパク質である。
本発明は新規複合コアセルベーション法、特に疎水性コア材料をカプセル封入する高い固定マイクロカプセル(high fix microcapsule)の製造のために好適であり、その際、そのようなマイクロカプセルは“ハラール”であることを証明される食品またはフレーバー中に混和することができる。本発明の方法はポリアニオン材料と組み合わせて、ポリカチオンコロイドとしてB型ゼラチンを使用する。例えばpH、または工程の順序のような方法パラメーターはカプセル化を成功させるために重要である。更に詳細には、この方法はpHを乳化または分散工程の前に3.0〜4.7に調整するという事実により特徴付けられている。
a)プラスに荷電した高分子量コロイドおよびマイナスに荷電した高分子量コロイドの溶液の混合;

e)マイクロカプセルの壁形成のための、d)工程で得られたコアセルベートの冷却;および
f)硬化剤の添加;
を包含し、この方法は、プラスに荷電した高分子量コロイドがB型のゼラチンであることにより特徴づけられている。
図1および2は、それぞれA型ゼラチン(図1)およびB型ゼラチン(図2)をカチオンポリマーとして製造した複合コアセルベートの倍率10倍の顕微鏡写真である。
本発明を以下の実施例につきより詳細な方法で記載する、その際温度を摂氏で示し、略語は該分野で通常の意味を有する。
本発明方法によるマイクロカプセルの製造−他の方法との比較
B型ゼラチン(250 Bloom、オリジン:SKW Biosystem)、アラビアゴム、冷時圧搾オレンジピールオイル、リモネン、オイゲノールおよび酢酸オクチルをマイクロカプセルの製造のために使用した。幾つかの試験:コロイドの濃度、系のpH値、希釈水の量、工程の順序およびゼラチンとアラビアゴムとの比の変動、を実施した。
全てのマイクロカプセルを乳化または分散、コアセルベーション(水希釈)、壁形成(冷却)および架橋の基本的工程からなる方法により製造した。しかしながら、成分の割合および/または方法におけるpH調整の段階を変化させた。全ての試験において、コロイド溶液を温度37〜40℃で混合した。系の最終温度は22〜24℃であった。pHを乳酸の添加により調整した。冷却速度は0.25〜0.5゜/分であった。バッチを最終温度に冷却した後、グルタルアルデヒド溶液(25%)0.14質量%を添加してタンパク質壁を架橋した。
Claims (8)
- 次の順序で、次の工程:
a)プラスに荷電した高分子量コロイドおよびマイナスに荷電した高分子量コロイドの溶液の混合;
b)a)工程で得られた混合物のpH値の3.0〜4.7の間の値への調整;
c)該混合物中への疎水性コア材料の乳化または分散;
d)c)工程で得られるエマルジョンまたは分散液に水希釈および/またはpH調整を施すことによるコアセルベーションの達成、
e)マイクロカプセルの壁形成のための、d)工程で得られたコアセルベートの冷却;および
f)硬化剤の添加;
を包含し、プラスに荷電した高分子量コロイドがB型ゼラチンであることを特徴とする、疎水性コア材料含有マイクロカプセルの製法。 - ゼラチン対マイナスに荷電したコロイドの比が3:2である、請求項1記載の製法。
- 冷却工程を0.25〜0.5℃/分の速度で実施する、請求項1記載の製法。
- 疎水性コア材料がフレーバー成分またはフレーバー組成物である、請求項1記載の製法。
- 請求項1記載の製法により得ることのできるマイクロカプセル。
- 80質量%までが疎水性コア材料からなる、請求項5記載のマイクロカプセル。
- フレーバリング助成分と一緒に活性成分として請求項5記載のマイクロカプセルを含有する、食品組成物。
- フレーバリング組成物に請求項5記載のマイクロカプセルを添加することからなる、フレーバリング組成物の官能的性質を付与、改善または変性する方法。
