Description

本発明を、以下の非限定的例を参照してここにさらに説明する。
「ブランク」カプセルの調製
495gの蒸留水を入れた1Lのビーカーに、5gのアルギン酸ナトリウム(Keltone(登録商標)LV)を加えた。この混合物を適当な速度で、アルギン酸塩が完全に溶解するまで撹拌した。43.2gのMCTを入れた250mlのビーカーに、2.8gの細かい粉末状CaCO3を加えた。この混合物を適当な速度で、CaCO3が均一に分散されるまで撹拌した。この分散液を、pHが中性のアルギン酸塩溶液に、適当な速度で撹拌しつつ加えた。所望の液滴サイズ100〜500ミクロンになったときに、50%クエン酸を加えてpHを4.5に下げた。数分後にバッチは粘性となり、500gの蒸留水を加えてこの系を希釈した。バッチを適当な速度で数時間撹拌した。この期間中、カプセル壁のサイズは著しく成長した。次の日、従来法によりカプセルを濃縮し、乾燥した。
香味料含有カプセルの調製
995gの蒸留水を入れた2Lのビーカーに、5gのアルギン酸ナトリウム(Keltone(登録商標)LV)を加えた。この混合物を高速で、アルギン酸ナトリウムが完全に溶解するまで撹拌した。43.2gのd−リモネンを入れた250mlのビーカーに、2.8gの細かい粉末状CaCO3を加えた。この混合物を適当な速度で、CaCO3が均一に分散されるまで撹拌した。この分散液を、pHが中性のアルギン酸塩溶液に、適当な速度で撹拌しつつ加えた。所望の液滴サイズ500〜1000ミクロンになったときに、50%クエン酸溶液を加えてpHを5に下げた。バッチのpHを、適当な速度で撹拌中にモニタリングした。この間にpHは上昇し、さらに50%クエン酸溶液を加えて、pHを約5に維持した。これをpHが不変となるまで続けた。バッチを一晩撹拌した。次に撹拌を停止し、カプセルを新鮮な水で洗浄し濃縮した。濃縮カプセルスラリーを次に、500gの2%CaCl2溶液を入れた1Lのビーカーに加えて、架橋を完成させ、壁を強化した。カプセルをこの溶液中で数時間撹拌した。カプセルを再度水で洗浄して任意の残留CaCl2を除去し、水中で保存した。
ブランクカプセルの低温装填(cold loading)
例1からの乾燥カプセル14.6gおよび1.4gの水を完全に混合して、水を均一に分散させた。カプセル壁を15分間水和させた。4gのアセトフェノンを水和されたカプセルに加え、混合物を完全に混合し、次に一晩放置した。
水中への香味料の放出について、装填されたカプセルを30℃で500mlの水に溶解することにより決定した。カプセルは、封入された香味料の約50%を10分間で、75%を30分間で放出することが見出された。
Claims (5)
- 水非混和性液体を含有するコアシェル型カプセルを作製する方法であって、
(a)水非混和性液体中に、酸性のpHで活性化させることによりカルシウムイオンまたはマグネシウムイオンを放出する架橋剤を分散させるステップ;
(b)得られた分散液を、架橋可能な親水コロイドの水溶液中で乳化させるステップ;および
(c)pHを酸性にして前記架橋剤を活性化させて、親水コロイドを分散液/溶液境界で架橋するステップ、
を含む、前記方法。 - 親水コロイドが植物源由来である、請求項1に記載の方法。
- 親水コロイドが、食品用アルギン酸塩、ペクチン、カードランガムおよびゲランガムの少なくとも1種である、請求項2に記載の方法。
- 封入される水非混和性液体が、カプセルを調製するプロセスの間存在している、請求項1〜3のいずれか一項に記載の方法。
- カプセルをブランクカプセルとして作製し、次のステップにおいてこれに水非混和性液体を装填する、請求項1〜4のいずれか一項に記載の方法。
