Abstract

Secondo l'invenzione si realizza un metodo per la pastorizzazione di prodotti alimentari che comprende una fase di riscaldamento veloce del prodotto (10) mediante irraggiamento con radiofrequenza, una fase adiabatica di mantenimento in temperatura del prodotto stesso e una fase finale di scarico del prodotto a fine trattamento.Il pastorizzatore che realizza tale metodo comprende un tunnel di riscaldamento (2), nel quale il prodotto da pastorizzare (10) viene riscaldato durante il passaggio fra le piastre (6, 8) di un condensatore (7) alimentato da un generatore di radiofrequenza (4) ed un tunnel di mantenimento in temperatura (3) nel quale il prodotto (10) viene mantenuto in temperatura tramite la circolazione di aria riscaldata mediante una batteria di scambio termico (37).
