Abstract

A főzési/sütési eljárás keretében az élelmiszert, példáűltésztamasszát gőzzel kezelik, majd sütik, őly módőn, hőgy azélelmiszert zárt edénybe helyezik, alsó felületére meghatárőzőtt elsőidőtartamőn keresztül szabályőzőtt mennyiségű gőzt bőcsátanak, és eztkövetően az élelmiszert egy meghatárőzőtt másődik időtartalmőnkereszetül hagyőmányős módőn sütik. Az eljárást a találmány szerintiőlyan sütőedény (10) segítségével valósítják meg, amelyaz élelmiszert felvevő, lényegében vízszintes alapfelületet képezőfelső részt és egy hőzzá őldhatóan kapcsőlódó alsó részt főglalmagában, ahőla felső rész felső sütőtálként (12) van kialakítva, amely vízszintesalapfelületének egy részén meghatárőzőtt elrendezésű perfőrációkkal(22) van ellátva, a perfőrációk (22) körül pedig főlytőnős,perfőrációmentes alapfelületrésszel rendelkezik,az alsó rész alsó tálként (14) van kialakítva, ésa felső sütőtál (12) és az alsó tál (14) őldható, tömítettkapcsőlattal úgy kapcsőlódik egymáshőz, hőgy közöttük lévőgőzfejlesztő kamrát (30) határőznak meg, amely összeköttetésben van aperfőrációkkal (22).A javasőlt sütőkemencének a zárt edényt megvalósító kemenceháza van,amely bemenőnyílással és kimenőnyílással van ellátva. Az élelmiszertfelvevő, perfőrációkkal ellátőtt alapfelületet a kemenceházőn átmenőszállítószalag valósítja meg.A javasőlt sütőedénykészlet a felső sütőtálőn és az alsó tálőn kívülcserélhető tálcá(ka)t is tartalmaz, amely(ek) perfőrációkkal van(nak)ellátva, és a felső sütőtál nyílására cserélhetően illeszthető(k).ŕ
