Claims (9)
1. Mliječna pjena pjena stabilna na sobnoj temperaturi, u obliku aerirane emulzije ulja u vodi, gdje mliječna pjena stabilna na sobnoj temperaturi sadrži mliječnu bazu, izvor masti, emulgator i sustav stabilizatora na bazi hidrokoloida, naznačena time što navedena mliječna pjena stabilna na sobnoj temperaturi ima sadržaj masti od 4 do 14%, težinski, u odnosu na mliječnu pjenu stabilnu na sobnoj temperaturi, što izvor masti sadrži mliječnu mast i kakaovu mast, gdje se težinski omjer mliječna mast:biljna mast kreće od 25:75 do 60:40, te što se sustav stabilizatora na bazi hidrokoloida bira iz skupine koju čine agar-agar, alginati, karagenan, kazeinati, gelan, želatina, te njihove kombinacije, gdje je sustav stabilizatora na bazi hidrokoloida prisutan u rasponu od 0,5%, težinski, do 2.5%, težinski, u odnosu na mliječnu pjenu stabilnu na sobnoj temperaturi, gdje pjena ima aktivnost vode (Aw) od 0,70 do 0,99, te gdje je navedena mliječna pjena stabilna za skladištenje na temperaturi od 20 °C do 30 °C, u trajanju od najmanje 3 mjeseca do 6 mjeseci.
2. Mliječna pjena stabilna na sobnoj temperaturi u skladu sa zahtjevom 1 ili 2, naznačena time što se emulgator bira iz skupine koju čine mono- i digliceridi masnih kiselina, esteri mono- i diglicerida s mliječnom kiselinom, šećerni esteri, esteri masnih kiselina s poliglicerolom, te njihove kombinacije.
3. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 3, naznačena time što ima ukupnu promjenu u volumenu u rasponu od 10% do 200%.
4. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 4, naznačena time što je mliječna pjena stabilna na sobnoj temperaturi čokoladna pjena.
5. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 5, naznačena time što mliječna pjena stabilna na sobnoj temperaturi ima sadržaj suhe tvari od 25%, težinski, do 48%, težinski.
6. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 6, naznačena time što se izvor masti sastoji od mliječne masti i kakaove masti.
7. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 7, naznačena time što mliječna pjena stabilna na sobnoj temperaturi ima sadržaj šećera od 5%, težinski, do 40%, težinski, u odnosu na mliječnu pjenu stabilnu na sobnoj temperaturi.
8. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 8, naznačena time što je emulgator prisutan u rasponu od 0,1%, težinski, do 1%, težinski, u odnosu na mliječnu pjenu stabilnu na sobnoj temperaturi.
9. Mliječna pjena stabilna na sobnoj temperaturi u skladu s bilo kojim od patentnih zahtjeva 1 do 9, naznačena time što je mliječna baza prisutna u rasponu od 50%, težinski, do 90%, težinski, u odnosu na mliječnu pjenu stabilnu na sobnoj temperaturi.
