Abstract

Η εφεύρεση αναφέρεται στην παραγωγή αφρώδη οίνου από συγκεκριμένες ποικιλίες σταφυλιών (ασσύρτικο, μαλαγουζιά, αθήρι και chardonnay) με βιολογικό κρόκο Κοζάνης με σκοπό τη δημιουργία μιας νέας κατηγορίας οίνου. Ο βιολογικός κρόκος Κοζάνης προστίθεται κατά την πρώτη ζύμωση για την παραγωγή οικονομικού αφρώδους οίνου (τύπου Prosecco, Cava, Sekt) ή κατά την δεύτερη ζύμωση για την παραγωγή εκλεκτού αφρώδους οίνου (τύπου Champagne).
