Abstract

Novelty: A method for the preparation of natural fruit-flavoured zest in the liquid or solid form is disclosed. Purpose: This production method aims at conserving both the aroma (smell) and the taste of fruit. Said method is based on the technical citrus fruit processing(lemon, orange, bergamot orange, citrus etc) in order to create the natural aroma and taste thereof for use in pastry, beverages and dairy products (tarts, rolls, cakes, wafers, ice creams, sorbets, shewing-gums, bonbons, tea, coffee, puddings, yogurt, milk). Alternatively, the produced zest can be dried and take an irregular form for being used as a dried dessert or as sugar or powder to be added in sweets, dairy products and tisanes.
