Abstract
Crustacea bodies, e.g. crabs, crawfish, raw or pre-cooked, are treated with acid, and the softened product, after removal of the acid by washing or neutralization, is compounded and processed into edible form, e.g. a paste, spread, or meat loaf. The acid may be mineral, e.g. hydro chloric, sulphuric, phosphoric or nitric acid, or organic e.g. acetic, tartaric or citric acid, and if mineral acid is used, neutralization with alkali, e.g. ammonium hydroxide, is necessary, preceded and/or followed by washing with water. Any residual ammonia may be boiled off. Before treatment the meat in the tail and the carapace (or its top only) of the crustacea are preferably removed and a detergent or surface-active agent, e.g. glycerine, may be added to the acid.
