Abstract

The white meat of large fish e.g. coalfish, pollack, cod, ray, halibut &c. is preserved by making parallel cuts along the cleaned and filleted fish (laid out flat) down to a lower layer of meat or skin which is left intact to hold meat together, and the meat is then treated in one or more baths containing edible dye, smoke-flavourings and preservatives. Flavouring with herbs and oven smoking may also be effected and a binding or coating, e.g. of gelatine, applied.
