Abstract
1,052,872. Edible collagen for sausage casings. JOHNSON & JOHNSON. Oct. 1, 1963 [Oct. 1, 1962], No. 38604/63. Heading A2B. [Also in Divisions C3 and C6] In producing swollen, edible collagen fibrils, which can be extruded to form edible sausage casings, hide is soaked in a dilute acid, such as acetic, formic, lactic, butyric, or citric acid, having a dissociation constant between 1.0 x 10<SP>-5</SP> and 1.0 x 10<SP>-3</SP> and, e.g. a pH between 2.3 and 3.7, until it becomes swollen and soft. The hide is then removed from the dilute acid, scraped on each side, to remove from the corium any adhering flesh, hair, hair follicles, the epidermal layer, dermis and adnexial glands, consisting of sebaceous and sudorific glands, and then treated with a dilute aqueous alkaline solution, e.g. a solution of ammonia or a salt of a strong base and a weak acid, such as sodium bicarbonate, not containing lime or other alkaline earth compound, to neutralize remaining acid and de-swell the corium. The corium is then washed with water. The washed corium is comminuted and treated with a dilute acid to yield the swollen collagen fibrils.
