Abstract

In the production of yeast, particularly baking yeast, in nutrient solutions containing sugar by the aeration process, the dissolved oxygen content of the nutrient liquid is continuously measured and is kept by a suitable regulation of the air supply, at least in stages, to a level determined by the yeast yield desired in each case.
