Abstract

A continuous process for the production of yeast involves growing yeast in a first fermentation vessel in a liquid nutrient medium under conditions of aeration, adding to the medium nutrients containing assimilable carbon, nitrogen and phosphate while transferring yeast-containing medium from the first vessel to a second vessel at such a rate as to maintain the concentration of yeast cells and volume of medium in the first vessel constant, continuing the growth of yeast in the second vessel while adding to the medium in this vessel a source of assimilable carbon and recovering yeast-containing medium from the second vessel at such a rate as to maintain the concentration of yeast cells and volume of medium in this vessel constant, and entails maintaining a defined formol value for nitrogen between 1 and 2 in the first vessel and retaining the yeast cells for a mean time of at least 3 hours, preferably about 4 hours, in the second vessel.
