Abstract
D-arabitol is produced by fermenting under aerobic conditions a liquid nutrient medium including sources of assimilable carbon, nitrogen and phosphorus with a D-arabitol producing species of the genus Hansenula and controlling the rate of utilisation of the assimilable carbon source in such a manner as to prevent the formation of substantial quantities of ethyl alcohol and/or ethyl acetate during the fermentation by limiting the concentration of one of the other required nutrients in the medium, conveniently the assimilable phosphorus. Controlled quantities of the limiting nutrient may be added during the fermentation. The arabitol may be recovered by adding phosphoric acid or calcium superphosphate to the fermented medium, neutralising with lime, filtering hot and crystallising the arabitol from the filtrate.
