Abstract

In the clarifying of beer, such as ale, porter and stout, using isinglass finings, there is introduced into the beer an auxiliary fining agent (having the property of accelerating the action of the isinglass) prepared in the form of solid tablets. The auxiliary fining tablets are preferably introduced into the beer before introducing the isinglass finings. The tablets contain as their principal active constituent a dried extract of carragheen moss or an alkali metal (sodium) salt of alginic acid and may include also sodium bicarbonate together with an acid sulphate or sulphite or/and tartaric acid or citric acid, and a small quantity of lubricant such as commercial stearin. Examples are given.
