Abstract

In a dry powder for addition to water to produce an effervescent soft drink in which the ebullient reacting agent is a carbonate and an acid reacting substance, there is selected for either the carbonate or the acid ingredient or both a readily water-soluble substance in association with a sparingly water-soluble substance sufficiently finely divided to produce a colloidal dispersion when the powder is added to water, whereby there is produced an immediate generation of carbon dioxide followed by a slow and prolonged generation of carbon dioxide. The acid ingredient may consist at least in part of a complex phosphate compound, e.g. hemisodium phosphate, derived from a readily soluble orthophate and a sparingly soluble metaphosphate; to the hemisodium phosphate there may be added a more soluble acid reacting phosphoric acid ingredient, e.g. a mixture of monosodium acid phosphate and orthophosphoric acid. It is stated in the Specification that, from the studies made in connection with the invention, the structural formula of hemisodium phosphate appears to be HPO3. NaH2PO4. H2O and not NaH2PO4. H3PO4. The carbonate ingredient may consist of at least 60% by weight of calcium carbonate of particle size 0,03-0,1 micron, in association with a water-soluble carbonate such as sodium, potassium or ammonium carbonate or bicarbonate, and 10 parts by weight of the carbonate ingredient may be employed with 13,5-20 parts of citric acid; orthophosphoric acid, tartaric acid and citric acid partly replaced by hexosephosphoric acid or their salts may also be used. According to an example, directed to preparing a grape-flavoured carbonating concentrate, 632 g. anhydrous citric acid (particle size 0,004 inch) and 328 g. calcium carbonate (particle size 0,03 micron) were tumbled for three minutes after which 140 g. dried potassium bicarbonate (particle size 0,004 inch) was added and tumbling was resumed. 20 g. grape flavouring and 1,2 g. certified purple dye were added in turn, tumbling being continued thereafter for 1 1/2 to 2 hours. The carbonate ingredient may consist of at least 60% by weight of calcium carbonate of particle size 0.03-0.1 micron, in association with a water-soluble carbonate such as sodium, potassium or ammonium carbonate or bicarbonate, and the carbonate ingredient may be employed with orthophosphoric, tartaric and citric acids and their salts or citric acid partly replaced by a hexose phosphoric acid. According to an example directed to preparing a grape-flavoured carbonating concentrate, 632 g. anhydrous citric acid (particle size 0.004 inch) and 328 g. calcium carbonate (particle size 0.03 micron) were tumbled for three minutes after which 140 g. dried potassium bicarbonate (particle size 0.004 inch) was added and tumbling was resumed. 20 g. grape flavouring and 1.2 g. certified purple dye were added in turn, tumbling being continued thereafter for 1 1/2 to 2 hours. The tumbled composition was blended with 2400 g. of fine sugar crystals and tableted; a 35 g. tablet made a satisfactory seven-ounce drink. In certain other examples, the ebullient reacting agent consisted of mono-ammonium acid carbonate, with or without monosodium acid carbonate; together with hemisodium phosphate, orthophosphoric acid and, optionally, monosodium acid orthophosphate. Other examples are directed to effervescent concentrates of root beer or kola flavour and a concentrate including artificial sweeteners. The tableted concentrate may include a lubricant such as polyethylene glycol. Monocalcium phosphate is desirably included in cherry-flavoured concentrates.
