Baking-powders. - Calcium acid phosphate, composed of spheroidal particles, free from sticky or gummy substances, and containing less than 1 per cent of free phosphoric acid, for use as the acid ingredient in baking-powders, effervescent mixtures, self-rising flours, phosphate flours and similar mixtures, is prepared by adding milk of lime of specific gravity 1.20 to concentrated phosphoric acid and spraying the resulting suspension into warm air.
