Abstract

Foodstuffs having high moisture and protein contents, e.g meat, fish, are preserved by reducing the undried food to small pieces, mixing with starch or a starch-containing flour, the proportion of the starch or flour being 40 per cent to 85 per cent by weight of the undried mixture, and drying the mixture. According to an example, 100 kg. minced lean meat was intimately mixed with 77 kg. pre-dried manioc flour. The mixture was dried at 50-55 DEG C., e.g. by exposure to the tropical sun, to reduce the moisture content to less than 15 per cent, thereby providing about 117 kg. of white powder free from obnoxious odour. Fish may be heated before or after mixing, with warm air at 80 DEG C. for several minutes to expel oil.
