724,482. Coating bakers' and confectioners' goods. OAKES CORPORATION, .E. T. May 12, 1953, No. 13273/53. Class 28 (1). Marshmallow, or the like, newly deposited on biscuits or the like has upstanding tips and the biscuits or the like are carried past a refrigerated pressing member to press down the tips. Biscuits or the like are carried on a conveyer belt 12 past a depositor 10 and detipping roller 20 and then transferred to mesh conveyer 16 where they are coated with chocolate by enrober 17. Roller 20 is a cylindrical shell closed by plates 22, 23, plate 23 carrying a shaft 24 driven so that the peripheral speed of the roller 20 corresponds with the speed of the conveyer belt 12. Refrigerant liquid or gas flows through conduit 33 into roller 20 and is discharged through space 36 between conduit 33 and hollow shaft 28 for recirculation. Preferably, the cooling is sufficient to cause frost to form on the roller 20. Before biscuits are passed under the roller, the frost is wiped off and does not reform on the parts engaged by successive marshmallow toppings, which parts remain moist.
