[Class 30] [Also in Group VI] A knife for slicing food e.g. sausages or vegetables into uniform slices has a handle 1 secured at its ends to the ends of a knife blade 5 so that the handle lies along closely adjacent and in line with the blade, whereby cutting pressure is applied within the perimeter of the food being cut as nearly as possible to the blade, substantially in the plane and at the level of the blade. The handle 1 has gripping surfaces 2 extending perpendicularly to the blade and a downward extension 3 parallel to the blade forming a combined finger guard and guide member sliding over the face of the food 12. The blade 5 is interchangeable and is adjustable on threaded bolts 6 to and from the handle 1. The blade is held under tension between the bolts 6, and tension is adjusted by a nut 9 on an extension 7 of a bolt 6.
