Abstract

606,878. Cocoa manufacture. WIDEN, O. E. Oct. 26, 1942, No. 14991. [Class 129] Unpleasant t a s ti n g substances are removed from cocoa by blowing through it super-heated steam at sub-atmospheric pressure, preferably at a temperature of 80‹C. Ammonia gas and air may be mixed with the steam. Apparatus for the process comprises a chamber 1 provided on the lower part with a heating jacket and connected by valved pipes 23, 26 to a cocoa container 24, and a storage container 27, by a valved pipe 31 to a water tank 35. and by a pipe 3 to a condenser 41 and vacuum chamber 42 connected by a valved pipe 43 to the suction side of a pump 46 and by a valved pipe 49 to the pressure side. Water in 35 is raised to say, 60‹C., and is evacuated by the pump to draw the cocoa into it. It is then heated to say 80‹C. and the valve 30 is then opened to allow the vapour to rise from 35 into 1, where it is super-heated to 80‹C., and blown through the cocoa by perforated pipe 7a. The cocoa is stirred by rotating arms 15 coacting with fixed arms 7 in the lower part of 1. After treatment pressure from the pump forces the cocoa from 1 to 27.
