Abstract

Modified starches, e.g. cold-swelling starches, are obtained by heating starch or starch-containing materials with an aqueous solution of a volatile organic liquid of substantially neutral reaction to disrupt the outer membrane of the starch granules, precipitating the starch by increasing the concentration of the organic liquid present or by adding another organic liquid of the same class, and then separating the starch. The separated starch may be washed with the organic liquid and dried. Suitable organic liquids are water-soluble alcohols, ketones and esters, e.g. ethyl or isopropyl alcohol, acetone or ethyl lactate. After use, the organic liquids are suitably treated and returned to the process.
