Abstract
Fish is preserved without freezing by slow percolation with fresh or sea water which has been saturated with air and is at a temperature slightly above 0 DEG C. but may be slightly below this temperature where sea water is used. The water may be supplied continuously or intermittently to the fish. In one form, sea water before supplying it to the fish is pumped through a filter into a tank in which it is aerated and cooled, or the water may be cooled in one tank and aerated in another by forcing air in below water-level through small inlets such as through porous bricks. Aeration may also be effected by atomizing the water in the trawler hold, bin, &c., containing the fish so as to create a mist which condenses on and trickles through the fish. The fish may be cooled before being treated.
