Abstract

Cereal products are mashed by mixing the milled cereal product with 2 1/2 parts of water at a temperature not above 45 DEG R. to form a mash which is allowed to stand to dissolve a part of the enzymes of the malt and to convert and dissolve proteins therein. A part of the enzymatic liquid portion of the mash is withdrawn, the remainder is boiled and then mixed with the withdrawn portion to produce a temperature of about 60 DEG R., not exceeding 64 DEG R., at which temperature the mash is maintained until it tests negative with the iodine test. The mash remaining after withdrawal of the enzymatic liquid portion may be heated to 60-64 DEG R., and kept at that temperature until it tests negative with the iodine test, before being boiled.
