Fats and fatty oils, purifying.-In the removal of free fatty acids from animal and vegetable oils by heating in vacuo with alkaline solutions, the temperature is kept constant but the vacuum intensity is constantly increased until the soap is sufficiently concentrated to be filtered off. For example, during or after the neutralization of oil at 35-40‹ C. under a vacuum of 28 inches produced by a steam condenser, the vacuum is steadily increased to 29.9 inches by a steam injector between the neutralizing vessel and the condenser.
