Crystallizing.-A crystallizer for use in the manufacture of sugar has radial stirring arms 31 carried by a longitudinal shaft comprising one or more sections 22, 23, 24, one or more banks of pipes 32, 33, 34 for cooling fluid being carried by the arms 31 for the purpose of cooling and agitating the massecuite. Each bank of pipes comprises coils arranged in staggered relation, cold water being supplied from a pipe 37 and hot water withdrawn by a pipe 38, the banks of tubes being connected in parallel.
