Abstract

Treating with air; treatment by steaming.- Wheat or other gluten-containing cereal is subjected for a period of from four to ten hours to the action of hot air circulated by a fan through the grain and a heater and returned through the grain, the air entering the grain at a temperature of from 212‹ Fahr. to 240' Fahr. Steam is injected into the hot air before it enters the chamber containing the grain in sufficient quantity to cause the air to be saturated if cooled to 140‹ Fahr. After treatment the grain may be cooled or it may be run direct into bins. The heated grain is ground and mixed with ordinary flour in the proportion of “ per cent to 3 per cent.
