Stream - cutting machines of the kind in which zig-zag knives are used are arranged so that the knives lie diagonally on the path of the materiat and lateral movement is absent. The web of sweetmeat is advanced intermittingly by eccentric and ratchet mechanism and a pressure roller 10 to a cutting-table 14. The cutter 19 is reciprocated vertically by a rod 24. Between the cutter 19 and a shearing plate 16 is placed a stripping member 26. To prevent sagging of soft material a plate 18 supported adjustably on a frame 28 may be moved up against the plate 16. The edges of the plates 16, 18 and stripping member 26 are zig-zagged similarly to the cutter.
