Abstract

Starch is separated into amylopectin and amylose by freezing starch paste and treating the product with water or a dilute alkaline solution at a temperature of 50 DEG -60 DEG C. to dissolve the amylose. If the production of maltose is aimed at, the frozen starch paste is treated with an extract of ungerminated cereals, or with diastase prepared therefrom, at a temperature not exceeding 50 DEG C. The maltose formed is separated from the residual amylopectin by solution in water at a temperature of 50 DEG -60 DEG C. Alternatively, the enzymic treatment may precede the freezing operation. The amylopectin which remains after any of the processes set out above may be converted into a size by heating with water.
