Abstract
Buckwheat has its black outer husks removed by mechanical means and is then immersed in an aqueous solution or bath of protein coagulating reagents the product then being treated with water vapour and finally rolled or flattened into flakes: in a modification the grains, after removal of the husks, are treated with water vapour containing vapour of one or more volatile protien coagulating reagents and then formed into flakes. The reagents used are organic acids such as acetic, propionic, lactic and malic or alcohols such as ethyl, methyl, propyl and butyl. The treatment is preferably carried out below 70 DEG C., most suitably at a temperature not exceeding 50 DEG C. Powdered calcium carbonate is preferably dusted over the grain before the rolling operation. The protein coagulating reagents may be used singly or in mixtures.
