Diastase is formed by growing aspergillus oryzae upon the residue from germinated barley, wheat, &c., prepared by crushing the dry germinated grain, extracting the soluble matter with water, and pressing and steaming the residue. Rice or wheat bran, or corn from which starch has been removed may be mixed with the residue. After growth, diastase is extracted by treatment with water which may contain alcohol or glycerine, the solution is filtered, and treated with a precipitant for diastase. The precipitate is washed with alcohol or a mixture of alcohol and ether and dried.
