Abstract
A depolymerized starch for use as a baking aid is prepared by heating potato &c. starch in the presence of at least 27 per cent of water, without subjection to pressure or atomization, for a time which at the temperature used is sufficient for the formation of starch depolymerization products but insufficient for the formation of substantial quantities of degradation products, the final product having a waterbinding capacity not exceeding the ratio 1 : 8. In examples, commercial potato starch containing 20 per cent of water has 10 per cent of water added and is treated on plates or rollers heated to at least 150 DEG C., for not over 15 seconds; starch containing 38-50 per cent of water is treated for not over 7 seconds on plates or rollers steam-heated to below 100 DEG C.; an aqueous suspension of potato starch is heated to between 58-63 DEG C., for not over 15 seconds.ALSO:A depolymerized starch for use as a baking aid is prepared by heating potato &c. starch in the presence of at least 27 per cent of water, without subjection to pressure or atomization, for a time which, at the temperature used, is sufficient for the formation of starch depolymerization products but insufficient for the formation of substantial quantities of degradation products, the final product having a water-binding capacity not exceeding the ratio 1 : 8.
