Abstract
17,957. Katz, J. R. Dec. 31, 1913, [Convention date]. [Addition to 5154/14.] Preserving bread and pastry.-Comprises improvements in the process described in the parent Specification for treating bread or pastry with moisture laden air-currents for maintaining its freshness. The air is passed over water or watery solutions of sulphuric acid, common salt, or calcium chloride &c. at a lower temperature than the air current. Rotating disks &c. dip into the solutions so as to increase the surface of liquid, or the liquid may fall in streams or flow along surfaces in a chamber through which the air passes, or the air may be conducted on to or through the liquid by means such as annular funnels. Only part of the air need be treated, and the air may be mixed with steam.
