Abstract

1404887 Coated snack foods UNILEVER Ltd 11 Oct 1973 [11 Oct 1972] 47459/73 Heading A2B An edible carrier, e.g. a dehulled peanut, is coated with a starch-containing material containing starch and water in a weight ratio between 75:25 and 55:45, 20 to 40% of the starch being pregelatinised, and the coated carrier is then fried in oil. The coating may take place in a rotary drum. Corn starch is specified in the examples. Other edible carriers may be pulse, seeds, grains, pastilles and nuts. The coating may also include salt, monosodium glutamate, soya oil, garlic, paprika, and other flavours and colourings. The water and solids may be added separately to the rotary drum.
