Abstract

1284822 Yoghurt DSO "SERDICA" 30 Sept 1970 [7 Oct 1969] 20712/70 Heading A2B [Also in Division C6] A process for producing dry Bulgarian yoghurt in solid form comprises inoculating cow, sheep or buffalo milk with (i) the strain Streptococcus thermophilus No. 240 of the Bulgarian State Institute for Control of Drugs, and with (ii) a strain selected from Lactobacillus bulgaricum No. 236 adapted to the conditions of lyophilization and Lactobacillus bulgaricum No. 237 resistant to streptomycin, in a 3:1 ratio of cells, culturing the inoculated milk, enriching the inoculated milk with a culture in milk of the same strain(s) of Lactobacillus bulgaricus, causing the enriched milk to ferment so as to produce Bulgarian yoghurt, freezing the yoghurt and drying the yoghurt. The yoghurt is cooled at a rate of 1‹C per minute to below -25‹C and drying is effected by sublimation/lyophilization. The dry Bulgarian yoghurt is a milk-white powder, which may be tableted, and contains more than 100,000 vital cells of Lactobacterium bulgaricum per milligram.
