Abstract

1,260,247. Cell culture concentrates. MILES LABORATORIES Inc. April 13, 1970 [April 22, 1969], No.17491/70. Heading C6F. Cell culture concentrates useful as starter cultures in the production of cheese or other cultured milk products, are obtained by inoculating a liquid culture medium containing as the principal source of nutrients and carbohydrates proteasetreated milk solids or protease-treated whey solids (or both) with Streptococcus lactis, Streptococcus durans, Streptococcus thermophilus, Lactobacillus bulgaricus Leuconostoc citrovorum, incubating the inoculated medium while maintaining the pH thereof between 5 and 6 until the late logarithmic phase of cell growth is attained, cooling the medium to a temperature of from 4‹ to 7‹ C. and separating the bacterial culture cells from the liquid portion of the culture medium to form a cell culture concentrate. This may be stored until required at a temperature below -184‹ C. e.g. in liquid nitrogen.
