Abstract

FIELD: biotechnology, dairy industry. SUBSTANCE: symbiosis of lactic acid and acetic acid bacteria is combined with symbiosis of bifidobacteria, propionic acid and acetic acid bacteria at ratio = 1:3. Milk is added at amount 1.5% and kept at 33-35 C for 8-16 h. For preparing bacterial concentrate 3-5% sowing material - bacterial ferment "Symbiter" is added to nutrient medium and bacterial mass is accumulated at 33-34 C for 10-12 h. Fermentation of dairy base for nutrient and protective media is carried out by combination of strains Streptococcus thermophilus VKPM B-4741, Lactococcus lactis ssp. cremoris VKPM B-4541 and Acetobacter aceti VKPM B-5495 taken at ratio = 2:2:1. Product can be used for curative-prophylaxis using. EFFECT: high antagonistic activity, increased content of live microorganisms, increased yield of cells in milk.

Изобретение относится к биотехнологии и может быть использовано в производстве заквасочных препаратов и кисломолочных продуктов массового и лечебно-профилактического назначения. Для получения бактериальной закваски предварительно полученный симбиоз чистых культур молочнокислых и уксуснокислых бактерий соединяют с симбиозом бифидобактерий, пропионовокислых и уксуснокислых бактерий в соотношении 1 : 3, вносят в количестве 1-5 % в молоко и выдерживают при температуре 33-35oС в течение 8-16 ч. Способ обеспечивает увеличение биотехнологических и антагонистической активностей закваски, урожайности клеток в молоке. Для приготовления бактериального концентрата в питательную среду вносят 3-5 % посевного материала - бактериальной закваски "Симбитер" и осуществляют накопление бактериальной массы при температуре 33-34oС в течение 10-12 ч. Ферментацию молочной основы для питательной и защитной сред осуществляют сочетанием штаммов Streptococcus thermophilus ВКПМ В-4741, Lactococcus lactis ssp. cremoris ВКПМ В-4541 и Acetobacter accti ВКПМ В-5495, взятых в соотношении 2 : 2 : 1. Изобретение позволяет повысить в концентрате содержание живых клеток микроорганизмов с лечебно-профилактическими свойствами и получить концентрат с высокой антагонистической активностью.The invention relates to biotechnology and can be used in the production of starter preparations and fermented milk products of mass and therapeutic purposes. Fermentation of the milk base for the nutrient and protective medium is carried out by a combination of strains Streptococcus thermophilus VKPM B-4741, Lactococcus lactis ssp. cremoris VKPM B-4541 and Acetobacter accti VKPM B-5495, taken in the ratio 2: 2: 1. The invention allows to increase the concentration of living cells of microorganisms with therapeutic and prophylactic properties in the concentrate and to obtain a concentrate with high antagonistic activity.
