Abstract

1512890 Fermented milk YAKULT HONSHA KK 31 Dec 1976 54450/76 Heading A2B Lactic acid beverages are made by fermenting a medium comprising animal milk with Lactobacillus helveticus YIT-0100 or YIT-0019 (novel strains whose deposit numbers are given). These strains may be co-cultivated with L. casei PS-1 or L. acidophilus. A medium containing skim milk powder and glucose may be inocculated with starter cultures of the organisms and incubated at 24-48‹C, preferably 37-40‹C, and pH 6.6-7.0. The product may be cooled and aged and optionally heatsterilised, and flavourings, sweeteners, fruit juices and water may be added.
