Abstract
Drinks having pleasant taste, which may contain only a small quantity of alcohol produced by fermentation of glucose and/or galactose, are produced by inoculating plain or skimmed milk with lactic acid bacteria, in particular Lactobacillus bulgaricus or Streptococcus thermophilus, and yeasts, which do not ferment lactose, but pref. ferment glucose and/or galactose and can assimilate lactic acid (e.g. Saccharomyces carlsbergensis).
