Abstract
1,162,488. Hop extracts. SWAN BREWERY CO. Ltd. Aug. 14, 1968 [Aug. 21, 1967], No. 38849/68. Heading C6E. A hop extract is prepared by washing whole hops with hot water (200‹ F.) and then heating the washed hops with water of a temperature within the range of 220‹- 230‹ F. after adjusting the #H to the desired level of alkalinity, the vessel in which the heating is carried out being vented to atmosphere to allow air and volatile hop oils to escape. The #H is adjusted initially to 9À0 with sodium carbonate ; during the extraction it gradually reduces to 7À0 Œ 1. The extraction is performed at an overpressure of 4 lbs. /sq.in. in a steam jacketed vessel equipped with a sparging ring, slotted plates and a circulating pump. The extract is drained through the slotted plates, cooled to 40‹ F. and stored under a blanket of carbon dioxide. The spent hops may be washed with water or slurried with wort from the kettle.
