Abstract

A suspension of hops in water or in wort is passed through a scraped-surface heat exchanger in which the suspension is heated to produce an aqueous hop extract or hopped wort (as the case may be). After being heated, the hop extract or hopped wort may be passed with agitation through a holding chamber, flash-cooled by reduction of pressure, and then cooled in another scraped-surface heat exchanger. Whole or comminuted hops may be employed. In the production of hop extract the water should be free from air, particularly oxygen, and the pH of the suspension should be suitably adjusted before treatment. In the production of hopped wort the hops may be added to either sweet wort obtained by lautering the product of a mashing process or to mash in the mashing vessel at some stage prior to completion of the mashing process, the whole mash being heated in the scraped-surface heat exchanger(s); preferably the temperature and duration of the heating and holding periods are sufficient to achieve completion of the "hot break". The scraped-surface heat exchanger consists of a hollow cylinder in which there is a rotor consisting of a shaft coaxial with the cylinder, upon which scraper blades are pivotally mounted in two or more diametrically opposed rows. The hollow cylinder has a jacket for steam heating or for cooling the suspension which is supplied at one end of the cylinder and discharged at the other. Alternatively, the rotor may be eccentrically fitted with respect to the axis of the hollow cylinder, as described in Specification 842,310. The suspension may be heated in two or more stages in two or more scraped-surface heat exchangers.
