Abstract
1308671 Extraction of α-acids from hops and isomerisation to iso-α-acids ALLIED BREWERIES (UK) Ltd 19 Jan 1971 [20 Jan 1970 9 June 1970] 2792/70 and 27909/70 Heading C6E [Also in Division B1] A process for preparing an iso-α-acid extract comprises agitating hops in water, the pH, time, and temperature being sufficient to disperse the α-acids by rupturing the lupulin glands without forming iso-α-acids, removing the unwanted vegetable matter and then heating the α-acids in aqueous dispersion under alkaline conditions to produce an aqueous extract containing iso-α- acids, or their salts. The pH may be controlled within the range 4-10 by the addition of acid or base, e.g. H 2 SO 4 , HCl, a phosphoric acid, lactic or acetic acid, alkali metal hydroxide, carbonate, bicarbonate, acetate or lactate or calcium hydroxide. The process may be applied to dried hops or to fresh hops e. g. hops which are attached to pieces of chopped bine. An apparatus for use in the extraction of α-acids from hops comprising a vessel provided with a plurality of sequentially inter-connecting chambers 2 forming a continuous flow path between inlet and outlet means at opposite ends of the vessel, each chamber being provided with a paddle 7 rotating in said chambers, stationary baffles 9 being present to increase turbulence. The mixture is taken via conduit 10 to a sloping sieve 11 from which the α-acid extract is drained to receiver 12, and is then passed on to a series of tanks in which isomerisation is effected.
