Abstract

In the brewing of wort for hopped fermented beverages, substantial quantities of trub and chill-hazing substances are removed at the hot break, in addition to the usual components removed, by adding to hopped wort while it is hot and before removal of trub precipitated therefrom a predetermined quantity of polyvinyl pyrrolidone sufficient to precipitate from the wort additional quantities of trub and chill-hazing substances as well as substantially all the added polyvinyl pyrrolidone. The polyvinyl pyrrolidone is preferably added to the boiling wort after introduction of the last hops; a quantity of 1 to 5 pounds per 100 barrels of wort is suitable. It is stated that a beverage fermented from the treated wort exhibits an increased yield of hop bitter substances. Specification 736,565 is referred to.
