Abstract
1,140,273. Pasta products. DIET-ERBA S.p.A. 4 Aug., 1966 [6 Aug., 1965], No. 35036/66. Heading A2B. Pasta (e.g. spaghetti, macaroni and vermicelli) having a protein content of less than 2% by weight, comprise a minor (relative to the starch content of the pasta) amount of a polysaccharide binder (e.g. carboxymethylcellulose, guar gum and alginic acid). The pasta may be prepared by forming an aqueous mixture comprising (Example 1) maize starch, arrowroot starch, carboxymethylcellulose and seed oil containing B-carotene, (Example 2) wheat starch, tapioca starch, guar gum and seed oil containing bixin carotene or (Example 3) rice starch, tapioca starch, alginic acid and dye (mixture of Tartrazine and Sunset yellow) into the desired shapes and then drying.
