Abstract
A margarine oil comprises at least 5% by weight of corandomized triglycerides containing saturated short-chain (i.e. C6- 14)fatty acid radical and saturated long-chain fatty acid radicals derived from arachidic and/or behinic acid, the amount of the long-chain radicals (calculated as free acid) being 0.3-5% by weight of the margarine oil, and the weight ratio of the short to long-chain radicals in the oil (calculated as free acid) being from 100:1 to 1:1. The short-chain radicals may be derived from coconut and/or palm kernel oils, and the long-chain radicals from hydrogenated rapeseed, mustard seed, wallflower seed, nasturtium seed and marine oils. The balance of the oil may be derived from soyabean, cottonseed or peanut oil, or lard. The corandomized triglyceride blend added to the oil is prepared by heating an appropriate oil mixture (e.g. 50:50 mixture of refined and bleached coconut and hydrogenated rapeseed oils) to 340 DEG F. under a vacuum of 10 mm. Hg, until dry, then adding a catalyst such as a glycerine/NaOH solution or sodium methylate and heating at 340-360 DEG F. under a vacuum of 10 mm. Hg until corandomization is complete. The mixture is then cooled. Throughout the whole process the mixture is agitated and a stream of nitrogen is passed through it.
